i think you have a fairly good plan going. i would just suggest to cut out the mashed potatoes from your lunch. the starch in the potatoes make them hard to digest and will add pounds.

and as far as jump roping and biking go, YES especially Jump rope. jump rope and running as well as walking are the best cardio and you will see results.

This is not healthy. All your meals/snacks need to have a balance of carbs, lean protein, and fat (good fats). Your breakfast and morning snack should be the biggest meal of the day. Your breakfast, dinner, and snacks all dont have an equal balance of carbs, lean protein, and good fats. For example, just yogurt has some protein, and good fat, but no carbs. And also, unless you're eating a whole sized container of yogurt (not the little snack packs) you're not eating enough, and you shouldn't eat just yogurt. Also, your dinner which is terrible. First of all, unless you're using organic peanut butter and jelly, you're going to load up on tons of bad fats, and lots of sugar. Talk to a health professional, because this diet will not lead you to weight loss. BUT - Your lunch is a prime example of a good meal. It has lean protein - chicken
carbs - potato
fibrous carbs - salad
good fats (a little bit of bad fats, but thats ok in small amounts) - chicken
Make all your meals have all these nutrients in them, and you will be on the right track to weight loss.
Also, you MUST exercise. If you want to lose weight in a healthy way, exercise is a must. Try jogging, or if thats to hard do a brisk walk. Do this for half an hour a day, in the morning, or afternoon. If you want to lose even more weight do two sessions a day. One in the morning, and one after your dinner to boost your metabolism for the night and burn more calories in your sleep!
Also I forgot to mention, drink twice as much water as you do now, at least. Water is so important to weight loss, I can't even stress that enough.

1.Yes it is healthy, but you have to eat less Carbohydrates and a little more protein (preferably white meat)
2.You will loose weight, but it will be like 1 and 1/2 pounds per week (it would be more if you do more exercise)
3.You should definitely do more exercise and you best bet would be running for half and hour, if you can't then run 5 minutes, walk 5 minutes, run four minutes, walk four minutes, run three minutes, walk three minutes, walk 3 min...and until you get to one min. When you get better at it, you would raise to 6 minutes and erase minutes 2 and 1. Then raise again until you can run for half an hour. (it will take some time, but it's effective)

165 pounds at your age and height, it's not that bad, you should probably be around 130-140

To lose weight, you should eat at least 500 calories less than you normally do. 3000 calories is a lot (maybe too much) for your age. 1500 calories is an excellent amount for you. It's not recommended that you eat less than 1000 calories a day, but eating 1100-1200 calories will help you even more. When you get to a satisfying weight, always stay within the 1500-2000 calorie range. If you're really active, it's okay to eat a little (100-300) more calories.

Try buying brands that are low in sugar. Jelly isn't the healthiest thing, though peanut butter should be just fine. Smuckers has a sugar-free jelly, which has much less calories and zero grams of sugar (it's sweetened with Splenda). You can buy the same flavors (strawberry, grape, raspberry, apricot, etc.) as you can with sugared jelly.

What kind of yogurt are you eating? Look for yogurt cups that say "Light" or "Lite" on them. The best kind (I think) is Dannon Light & Fit. It comes in great flavors such as strawberry cheesecake, white chocolate rapsberry, apple pie, key lime pie, and so on. They also do regular flavors, like strawberry and blueberry. Most "Light" brands are sweetened with Fructose, which is a natural sugar found in fruits. Refined sugar is not good for you and it's very fattening. But then again, everything is fine in moderation.

Mashed potatoes aren't great. They're very starchy and could put on weight. If you like your potatoes, eat some sweet potatoes instead. Both yams and sweet potatoes are much better for you.

Also, look into buying "Natural" peanut butter instead of Jiff, Skippy, Peter Pan, and those types. Skippy and Jiff have a Natural peanut butter, but those still have a lot of saturated fat and more sugar than necessary. Organic brands are the best for you, and are naturally sweetened. If you don't like the organic brands, try Smart Balance peanut butter. It tastes just like Jiff, without the bad fats and hydrogenated oils.

I think you should eat just a little more in the morning. Add a handful of nuts or unsweetened cereal to your yogurt. It tastes great, and even if the cereal isn't sweet, the yogurt adds the sweetness. A glass of lowfat or skim milk goes a long way, as long as it's not chocolate. A bit of protein never hurts, and it's highly recommended. You don't have to eat the same thing every day, because you'll end up getting tired of it. Excersise a little each day. If not, every other day. The website I put above shows you how many calories you burn by doing simple to advanced exercises. It even shows you how many calories you burn by doing simple things like showering.
